A classic Italian pasta dish that’s simple to prepare and features a creamy sauce with savory ham. Perfect for a quick weeknight dinner.

Ingredients

  • 200 g Spaghetti
  • 100 g Schinken (Pancetta or bacon)
  • 100-150 g Parmesan (freshly grated)
  • 2 Eigelb
  • Prise Salz
  • Prise Pfeffer
  • 1 TL Öl (Olive oil)
  • 1 Kelle Nudelwasser

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cut the ham into small cubes.
  3. Grate the Parmesan and separate the egg yolks from the whites.
  4. Cook the spaghetti according to package instructions until al dente.
  5. Heat the oil in a non-stick pan and lightly fry the ham cubes until crispy.
  6. Mix the grated Parmesan, egg yolks, and some pasta water in a bowl.
  7. Drain the cooked pasta and add it directly to the ham in the pan.
  8. Add the Parmesan and egg mixture to the pasta and stir well. Let it sit for 2-3 minutes and season with salt and pepper.
  9. Serve the finished pasta on plates and sprinkle with any remaining Parmesan if desired.

Notes

For best results, use fresh Parmesan. Ensure the spaghetti is cooked al dente to avoid mushiness.
